If you hadn’t noticed we like dishes that have ingredients that are easy to keep on hand at all times. This is one of those. At its core this is simply a 50/50 mix of canned black beans and sweetcorn (drained and rinsed). From there you can adulterate depending on what you have to hand. Our favorite extras are:
- Pico de gallo
- Diced avocado with a spritz of lime juice
- Pepitas
- Sriracha
Mix everything together and chill in the fridge for a couple hours before serving over crisp lettuce. As you can see in the picture above we usually top with some tortilla strips for textural contrast. Anything with a crunch works well, we cook our own in the air fryer.
