Kofta with Spinach And Pea Curry

The kofta in question here were made with the quite wonderful Lightlife ground meat substitute. I season them slightly differently each time, but mainly use a hefty amount of cilantro, garlic and earthy spice like Ras El Hanout. After that I cook them quickly at high heat in the air fryer.

The curry in the center is simple and easy – just some Patak’s curry paste added to a little sautéed onion and then cooked with chopped spinach and peas.
