This is another dish that’s fun to use with the Lightlife Plant Based Ground. On the plate above you will see:
- Some saffron and paprika spiked basmati rice
- Homemade hummus with Divina olive spread
- Trader Joe’s Beet Chips
- A quick salad of tomato, cucumber, onion, parsley, olive oil and garlic
- Middle Eastern style kofta
For the kofta, mix a whole pack of Lightlife Plant Based Ground with the following:
- Four tablespoons finely chopped parsely
- Three tablespoons playing, fat free Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp ground coriander
- salt, pepper to season
Then pan fry, bake or air fry till cooked.
