Middle Eastern Platter

This is another dish that’s fun to use with the Lightlife Plant Based Ground. On the plate above you will see:

  • Some saffron and paprika spiked basmati rice
  • Homemade hummus with Divina olive spread
  • Trader Joe’s Beet Chips
  • A quick salad of tomato, cucumber, onion, parsley, olive oil and garlic
  • Middle Eastern style kofta

For the kofta, mix a whole pack of Lightlife Plant Based Ground with the following:

  • Four tablespoons finely chopped parsely
  • Three tablespoons playing, fat free Greek yogurt 
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground coriander
  • salt, pepper to season

Then pan fry, bake or air fry till cooked.
